MEYER LEMON BARS 1. Preheat oven to 350 F 2. Crust: In the bowl of a food processor, add 1 ¾  C all-purpose flour + 1 ¾  sticks, cold unsalted butter, cut up + ¼  C confectioners sugar. Pulse until mixture forms crumbs, press into a 9x9-inch baking pan. Bake until top is lightly brown, 20 minutes 3. In the bowl of a mixer, add 1 ½  C sugar + 3 large eggs + zest and juice of 5 Meyer lemons (about ⅔ C), or regular lemons. Whirl to combine, then add ⅓  C all-purpose flour + ½  tsp baking powder + ½  tsp kosher salt. Pour over crust and bake until firm, 30 minutes 4. Cool, then dust with more confectioners sugar and cut into squares. Cut into 16 small or 9 large bars
