BUTTERMILK ONION RINGS 1. In a medium skillet (I like cast iron), add vegetable oil to a depth of 1-inch (2-3 C). Clip in a thermometer, turn heat to medium high and heat until thermometer registers 375 F 2. Meanwhile, slice 2 large yellow onions crosswise into ½ -inch slices. Separate to make rings 3. Place 2 shallow bowls next to each other. Fill one with 2 C all-purpose flour seasoned with 1 tsp kosher salt. Fill the other with 2 C buttermilk seasoned with 1 tsp kosher salt + 1 tbsp hot sauce 4. When oil is at temperature, dip onions, one at a time into flour, then buttermilk, then flour again. Gently add onions into the oil (away from you for safety). Repeat with more onions to fill the skillet, but not overcrowding 5. Fry 4 minutes, flipping halfway through. Remove and drain on paper towels, then repeat with more onions 6. Finish onion rings with flaky salt. In a small bowl, combine ¼ C chili oil + ¼ C mayonnaise for dipping. Serves 6
