ZUCCHINI BREAD 1. Preheat oven to 325 F 2. In a large bowl, whisk 2 ¼ C all-purpose flour + 1 ½ tsp baking soda + ½ tsp kosher salt + 1 tsp nutmeg + 1 tsp cinnamon + 1 ½ C sugar 3. In a medium bowl, whisk 3 large eggs + ¾ C vegetable oil + 2 C grated zucchini (2 medium zucchini grated on the large holes of a box grater) 4. Add wet ingredients into dry ingredients and mix until just combined. Pour into a buttered loaf pan. Sprinkle top with turbinado sugar and bake 1 hour until tester comes out clean. Note: this is a large loaf. As it bakes, it’ll rise over the top creating a beautiful crunchy top.
