PESTO GRILLED CHEESE
PESTO GRILLED CHEESE 1. Preheat oven to 325 F. Cut 1 head of garlic in half and place in the middle of a piece of aluminum foil. Drizzle with 1 tbsp extra-virgin olive oil + 1 tsp kosher salt. Wrap up tightly and roast until soft, 30 min. Remove and cool to the touch 2. In the bowl of a food processor, add 2 C loosely packed basil leaves + 8 oz shredded mozzarella + 2 tbsp grated Parmesan + roasted garlic cloves (squeeze out of garlic skin). Pulse until mixture is combined but the basil is still visible in flecks. Season to taste with kosher salt. Cut 8 thick slices of bread and divide mozzarella pesto mixture evenly on half of the bread slices. Cover with remaining bread making 4 sandwiches 3. In a large cast iron skillet over medium heat, add 2 tbsp unsalted butter. When foamy, lay two sandwiches in the skillet and toast 3 minutes. Flip and toast another 3 minutes. Repeat with 2 tbsp unsalted butter and remaining two sandwiches 4. Cut in half and serve. Serves 4
