SPINACH FAVA BEAN PUREE
SPINACH FAVA BEAN PUREE 1. Wrap 2 C fresh spinach (4 oz) in a clean, damp dish towel. Microwave 2 minutes until wilted. Squeeze towel to remove extra water. Place spinach in the bowl of a food processor 2. Shell 1 ¼ lbs fava beans to yield about 1 ½ C. Wrap in same damp dish towel and microwave 2 min (canned white beans are a good substitute . If using, add to food processor and skip to step 4). Remove second peel by pinching the skin and popping out the bean (this step is necessary and worth it!) 3. Wrap beans back in the wet dish towel and microwave 2 min, then add to the spinach 4. Using a microplane, zest 1 lemon, then 1 clove garlic into the spinach/beans. Puree, drizzling ¼ C extra-virgin olive oil until creamy. Season to taste with flaky salt 5. Serve garnished with micro greens, black sesame seeds, a lemon squeeze, more flaky salt and a touch of extra-virgin olive oil. Makes 1 ½ cups
