GRANOLA
GRANOLA 1. Preheat oven to 325 F. In a large bowl, whisk 2 large egg whites until foamy (the secret to crunchy granola). Add 4 C old-fashioned oats + 1 ½ C unsweetened coconut + 1 ½ C sliced almonds + 1 tsp kosher salt. Mix to combine 2.To the oat mixture add ½ C coconut oil (heat to liquid if necessary) + ½ C honey (tip: mix together first so the honey doesn’t stick to the sides of the measuring cup) 3. Place on two rimmed baking sheets lined with parchment. Bake 30 minutes 4. Remove from oven and cool completely undisturbed 5. Break up granola and add 1 C raisins or dried cherries. Store in an airtight container up to 1 month. Makes 8 cups
