PINK PEPPERCORN BROCCOLI
PINK PEPPERCORN BROCCOLI 1. Pink peppercorn butter: In the bowl of a mortar and pestle, add 1 tbsp whole pink peppercorns (black peppercorns are fine too). Using the pestle, grind to a rough mix. Add to 1 stick softened, unsalted butter + 1 tbsp flaky salt. Mix to combine and set aside 2. Preheat broiler. Cut 1 head broccoli (about 1 lb) into large stalks. Rinse in water and place wet broccoli on a rimmed baking sheet. Peel and slice 2 shallots and add to baking sheet 3. Place baking sheet about 4 inches under heat and broil until broccoli and shallots are charred, 4-5 min (Keep an eye on this! if some pieces are getting brown quickly, remove them and set aside) 4. Toss charred broccoli with pink peppercorn butter, a little goes a long way! Serves: 6
