“CHUNKY” COOKIES

“CHUNKY” COOKIES 1. Preheat oven to 350 F. In the bowl of a mixer, add 1 stick softened, unsalted butter + 6 tbsp sugar + 6 tbsp dark brown sugar. Mix on medium until light and fluffy, 4 min. Add 1 large egg + 1 tsp vanilla extract and beat 2 more minutes 2. To the wet ingredients, add 1 C all-purpose flour + ½  tsp baking soda + ½  tsp kosher salt. Mix until just combined 3. Add ½  C old-fashioned oats + ½  C salted macadamia nuts + ½  C dried cherries + 6 oz chopped semi-sweet chocolate (keep it chunky) 4. Roll into ¼ C balls and place on 2  baking sheets lined with parchment, leaving a few inches between cookies for spreading. Gently flatten with the bottom of a glass or your hand to 3-inches wide 5. Bake 12-14 minutes until golden brown. Makes 16 cookies
