ORANGE RHUBARB CAKE 1.Preheat oven to 350 F 2️. In the bowl of an electric mixer, add 2 sticks unsalted butter (softened) + 1 c sugar. Mix on medium until light and fluffy. Add two large eggs + zest and juice of 1 orange and continue mixing until combined. Add 2 c all-purpose flour + 1 tsp baking powder + ½ tsp kosher salt. Mix until just combined 3️. Divide 1 lb rhubarb in half. Chop one half and add to the batter. Slice the other half lengthwise to lay over the batter (set aside) 4️. Butter a 9-inch tart pan with removable bottom. Add batter, smoothing top. Arrange rhubarb halves across top so they’re side-by-side. Sprinkle turbinado (raw) sugar on top. Bake 45 minutes until tester comes out clean. Serves 8
