EDAMAME GUACAMOLE 1. Wrap 1 C frozen, shelled edamame in wet paper towels. Microwave 3 minutes. Set aside 2. In the bowl of a food processor, add cooked edamame + 1 ripe avocado + 2 scallions (white+light green parts) + juice of 1 lime (2 tbsp) + 2 tsp soy sauce + 1 tsp toasted sesame oil + ½ tsp Korean chili flakes (gochugaru) 3. Whirl to puree. Season to taste with kosher salt 4. Place in a serving bowl and garnish with a sprinkle of gochugaru + sesame seeds + sesame oil. Serve with tortilla chips + popcorn. Makes 1 ½ cups
